Katherina married Charles III de Valois, son of Philip III the Bold of France and Isabelle of Aragón, on 8 Feb 1301 in St. Cloud, Ile de France, France. (Charles III de Valois was born on 12 Mar 1270 in Fontainebleau, France, died on 15 Dec 1325 and was buried in Paris, France.)

Charles and Catherine I of Courtenay had four children:
- Catherine de Valois-Courtenay, titular Empress of Constantinople (1301-1346). She married Philip I d'Anjou, Prince of Taranto and had issue.
- Joan de Valois (1302-1363). Married Count Robert III of Artois and had issue.
- Jean, Count of Chartres (1303-1308).
- Isabel of Valois (1305-1349), Abbess of Fontevrault.
